THM Sushi Roll

Who doesn't love sushi? That chewy rice, the fresh veggies, spicy-sweet sauce... mmm. Sushi is actually very easy to make healthy, just replace the sugary and soy filled sauce, and add as many veggies and fish as desired! Usually one should make this with brown or black rice, but white rice is my occasional treat!

PS: if you make this for your friends, it looks pretty impressive, just saying!

What if you want to make this a low-carb meal? Use cauliflower rice! (Cauliflower is the modern "sliced bread"!) If you decide to go low-carb for this, you get to use creamy avocado and a creamy sweet-spicy sauce! If you go low-fat, you get to have chewy rice and sweet fruit! I have included variations for both. I thought rolling the sushi was going to be the most difficult part when I first made this, but it's actually quite easy!


S (fat) Style Sushi Ingredients:


Cauli-rice:

10-12 oz. bag of cauliflower

4 oz. of 1/3 fat cream cheese

1/2 Tbsp salt

1 tsp pepper

Instructions: Boil cauliflower until tender (about 10 min.) Chop into rice sized pieces, mix with other ingredients in bowl, set aside.


Veggies, pick your favorites (about 4 fit):

Chopped cucumber, purple cabbage, green onions, sliced avocado, cilantro, grated carrot (1/4 c. worth max), red peppers, jalapenos, asparagus, fresh ginger, or any non-starchy veggie.

Instructions: Chop everything finely, set in separate bowls.


For protein: Sushi style salmon, tuna, shrimp, crab, or sprouted tofu!

Instructions: thinly slice whichever protein you choose into 1 x 1/2 x 1/4 in. pieces. (Or just chop the mess out of it!)

Don't forget to half a sheet of Nori!


Sauces, this is where you can get creative:

Creamy sweet and spicy ( 3 Tbsp mayo, 2 tsp Siracha, 2 Tbsp coconut aminos)

Garlic and red pepper (1/4 c. coconut aminos, 1 tsp red pepper flakes, 2 tsp fresh garlic)

Lime and Cilantro ( 3 Tbsp mayo, 1/2 bundle fresh cilantro, 1 tsp salt, 1 lime's juice, 2 Tbsp water)

Chipotle ( 3 Tbsp mayo, 2 tsp ground chipotle powder, splash liquid smoke, 1/2 tsp fresh garlic, 2 Tbsp coconut aminos)

Instructions: blend any of these ingredient combinations with an emulsion blender and BOOM! Explosion of flavor!



E (carb) Style Sushi Ingredients:


Rice:

2 c. Black or Brown (or white) rice cooked to instructions + 1/3 extra c. water, per cup of rice while cooking. (Pretty simple.)


Veggies and fruits (carb meals can include fruit!), pick your favorites:

Chopped cucumber, purple cabbage, green onions, sliced avocado, cilantro, grated carrot, red peppers, jalapenos, asparagus, fresh ginger, mango, pineapple, papaya or any other veggie.

Instructions: Chop everything finely, set in separate bowls.


For protein: Same as S (fat) version.

Don't forget to half a sheet of Nori!


Sauces:

Creamy sweet and spicy ( 3 Light Laughing Cow wedges, 2 tsp Siracha, 2 Tbsp coconut aminos)

Garlic and red pepper (1/4 c. coconut aminos, 1 tsp red pepper flakes, 2 tsp fresh garlic)

Lime and Cilantro ( 3 Light Laughing Cow wedges, 1/2 bundle fresh cilantro, 1 tsp salt, 1 lime's juice, 2 Tbsp water.)

Chipotle ( 3 Light Laughing Cow wedges, 2 tsp ground chipotle powder, splash liquid smoke, 1/2 tsp fresh garlic, 2 Tbsp coconut aminos)

Plain lime juice is delicious too!

Instructions: blend any of these ingredient combinations with an emulsion blender.


Assembly:

Lay a Sushi rolling mat on counter space, then lay plastic wrap over mat, this will assist you in rolling. (I actually didn't have a mat, so I just used the plastic wrap.)

Place Nori on mat/plastic wrap, then layer Nori with 3/4 cup of rice (cauliflower or brown/black), pack rice tight on Nori.

Layer fat/carb appropriate veggies/fruits, and protein on rice, add some Everything But the Bagel if you want!

Roll mat/plastic wrap over with the Sushi like a scroll, but lift wrap away once the edges of the rice touch. Then squeeeeze!

Tip: if using cauliflower rice, leave the plastic wrap on sushi after rolled, slice with wrap intact, this created extra hold so your sushi doesn't fall apart.


Enjoy with sauce of your choice!
